“The science of cookery may very properly be classed among fine arts, and certainly it is by no means the least among them: for, in the nature of events, a practical knowledge of scientific cooking touches more intimately our homes and home comforts, and influences the masses of people as no other art, however lofty in its conception, or elevating it its results, may hope to do. The culinary art may truthfully be said to pave and prepare the foundation of all aesthetical arts: for, as a man is inevitably what he eats, so the characteristics of the cookery presented to his palate, are almost invariably reproduced in his life and works.”
So begins Maud Cooke in her classic (1890) book, reprinted in full with index by St. Johann Press. Not only do her 554 pages cover recipes for all possible occasions but there is detailed information on “Laying the Table,” preparation of “Remnants,” “Carving,” “Marketing,” and many other departments. In addition, there are major sections on such home economic items as housekeeping, beauty (Toilet), keeping a sick room, health tips, and much more. Ms. Cooke presents a wonderful slice of Americana at the end of the nineteenth century.
